FRIED EGGS WITH GOAT'S CHEESE AND ASPARAGUS

Looking for inspiration on how to add variety to your daily breakfast? Combine sautéed eggs, Goat Farm goat cheese and your favourite vegetables!

Ingredients

Ingredients for 2 portions:

  • – a few slices of Goat Farm natural goat cheese
  • – 1 small cauliflower
  • – 1 bunch of asparagus
  • – 2 eggs
  • – 30 g butter
  • – 100 ml cream
  • – 1 tbsp ajvar
  • – pinch of salt
  • – 1 tbsp inactive yeast flakes
  • – thyme
  • – sesame

METHOD OF PREPARATION

Wash and peel the cauliflower. Steam the cauliflower, then place in the bowl of a blender. Add the butter, yeast flakes, cream, ajvar and diced goat’s cheese. Blend to a smooth, velvety paste. Peel the asparagus and cook al dente in salted water. Fry the eggs in butter. Place the puree, cooked asparagus and cheese slices on a plate. Top with a fried egg and sprinkle with salt, sesame and fresh thyme.
